  • Method: Fry curry paste, add chickpeas and coconut milk, simmer for 10 minutes, then stir in spinach. Serve with rice.

  • Why it works: It’s fast, filling, and you can adjust spice levels to suit everyone. Leftovers taste even better the next day.
